German Blueberry Cake

Ingredients:

  • Sugar, 1/2 cup
  • Unbleached flour, 1/4 cup
  • Cinnamon, 1/2 teaspoon
  • Butter Substitute, 1/2 cup
  • Unbleached flour, 2 cups
  • Baking powder, 2 teaspoons
  • Salt, 1/2 teaspoon
  • Butter Substitute, 3/4 cup
  • Sugar, 3/4 cup
  • Egg, 1 cup
  • Milk Substitute, 1/2 cup
  • Fresh blueberries, 1 to 11/2 cup

Topping

  • Cream together the sugar and the butter substitute.
  • Sift together the flous and cinnamon. Add to the butter substitute sugar mixture, and blend thoroughly. Set aside..
    • Sift the flour. Measure and sift again with the baking powder and salt. Set aside.
    • Cream the butter substitute and sugar together. Add the egg, and blend well.
    • Add the flour alternately with the milk substitute, blending well after each addition.
    • Pour into a greased 9×9 pan. Cover with topping.
    • Bake in a 375° oven for 40 to 45 minutes.
